Quilting the Autumn Quilt
I am moving on to the boarders!
I know I have to be very careful free motion quilting on paper - if the stitches are too big they will pull out when I remove the paper.
It's good quality paper made for machine quilting, but I would have to hand quilt if I pulled out the stitches - and I want to get this quilt done!
so I am using the faster machine quilting and marking method - very slowly!
Cookbook Challenge!
Penne Rigatte with Spicy Sausage and Zucchini in Tomato Cream Sauce from Cooking Light Magazine
What can I say? It was good, my family - who really don't like zucchini - barely noticed it, but at the end of the day, it's just another pasta bake! It's good -but it's not going to earn a place in my fresh new cookbook. It's out of the old one though!
Here is the recipe - because it's a fine pasta bake!
Penne Rigate with Spicy Sausage and Zucchini in Tomato Cream Sauce
Cooking Light Magazine 2012
8 oz uncooked penne rigate pasta
6 oz hot turkey Italian sausage, casings removed
12 oz zucchini, quartered lengthwise and cut into 1/2 inch slices
1 1/2 tsp dried oregano
1 tsp dried thyme
1/4 tsp crushed red pepper
3 garlic cloves, minced
dash of sugar
2 tsp red wine vinegar
1 28 oz can no salt added whole tomatoes
2 Tbsp heavy whipping cream
3 oz part skim mozzarella cheese shredded
1 oz Parmigano-Reggiano cheese, grated.
1. preheat oven to 375 degrees
2. Cook pasta according to package directions, drain and set aside
3. Heat a large non stick skillet over medium high heat.l Add sausage to pan, saute for 5 mins or until browned, stirring to crumble. Using a slotted spoon, remove sausage from pan. Wipe drippings from pan with a paper towel. Add zucchini to pan;saute 3 mins or until crips tender, stirring frequently. Add oregano and next 4 ingredients (through sugar) saute 1 minute, stirring constantly. Add vinegar; cook for 30 seconds or until the liquid evaporates. Drain tomatoes in a sieve over a bowl reserving 1 cup tomato liquid. Crush tomatoes with hands, and add to zucchini mixture. Add reserved 1 cup tomato liquid, bring to a boil. Reduce heat, and simmer 5 mins stirring occasionally. Remove pan form heat; stir in cream. Add pasta and sausage to tomato mixture; stir to combine.
4. Spoon half of pasta mixture into an 11 x 7 inch glass or ceramic baking dish or into four small individual baking dishes. Sprinkle 1 oz mozzarella and 2 Tbsp Parmigiano-Reggiano over pasta. Top with remaining pasta mixture; sprinkle evenly with remaining mozzarella and parm cheeses. Bake at 375 for 20 mins or until browned and bubbly.
Errands, kids, dog, work, then

I've only marked and quilted on of the four sides!
Sew on and sew on!
