Autumn Quilt - quilting time

It's slow going, quilting always is!


I am going with a "tailor's" chalk marker.  The chalk pencil -even the white one - didn't show on the fabric.  Weird.  The paper pulled at my stitchesso I am not going with that.  The chalk wipes off easily - which is good at the end of the day, but actually I had to remark at my machine while quilting!
I am looking forward to using this pattern around all the borders!

Cookbook Challenge - SAT Test Tomorrow


Today I made Ginger Cake from Cooking Light Magazine.  This is for my daughter - who is taking the SAT test in the morning!  The cake is made with applesauce - vitamin C, ground flax seeds - omega 3's, and molasses - iron.  What more does a girl need on a big test day!
In case you are wondering "what's with the jars?" Once upon a time we had bugs in the pantry.  No more!  Everything gets put in a jar.  Some are the real deal from the department kitchen store, but some are jars.  With a mason jar - you can decorate the lid with a pretty paper circle

It's a piece from an old quilt calendar, of course!  Another jar was from spaghetti sauce and I sanded down the metal lid so now it looks vintage - not just an old spaghetti jar.
OK - here's the recipe!

Ginger Cake contributed to Cooking Light Magazine by Annie Ketchek

1/2 cup granulated sugar
1/2 cup applesauce
2 Tbsp canola oil
2 large eggs
1 cup molasses
1 1/2 cups flour
1/2 cup flax seed meal
1/2 cup toasted wheat germ
2 tsp baking soda
1/2 - 1 tsp ground cinnamon
1/2 - 1 tsp ground cloves
1/2 -1 tsp ground ginger
1/4 tsp salt
1 cup hot water

Preheat oven to 350 degrees.
Combine first 3 ingredients in a large bowl; beat with a mixer at medium speed until well blended (about 1 min).  Add eggs, 1 at a time, beating will after each addition.  Sir in molasses.

Lightly spoon flour into dry measuring cup; level with a knife.  Combine four and next 7 ingredients (though salt) in a large bowl.  Add flour mixture and 1 cup of hot water alternately to sugar mixture, beginning and ending with flour mixture.  Spoon batter into a 13 x 9 inch baking dish coated with cooking spray.  Bake for 30 minutes or until a wooden pick inserted in center comes out clean.  Cool in pan.  Cut into 12 squares.  Sprinkle with powdered sugar and serve with an apple slice if desired. 


So good!  Soft and tasty - and healthy!  This cake recipe is a keeper. Good luck on the SAT in the morning.  Just to be on the safe side I bought her a bottle of water - "Smart Water"!
