Cookbook Challenge

Oatmeal Chocolate Chip Cookies - this one is a family favorite!  We got it from a container of old fashioned oats - yup, right under the lid!
I made a few changes 
 My kids like their fruit on the side or in a smoothies.  They even accept fruit as dessert

but please don't mix into baked goods!  Chocolate chips to the rescue!  I just make it good dark chocolate.  And - I add ground flax seeds to the batter.  They don't know it and they can't taste the omega 3's. Ha!
It just adds a little nutty taste - which works for a cookie!  Even with the flax and oatmeal my kids devour these.
 I just sent these off to my college son - he's my pickiest eater - and he always picks this cookie!

Vanishing Oatmeal Cookies by the Quaker Oatmeal Company

1/2 cup (1 stick plus 6 Tbsp) butter, softened
3/4 cup firmly packed brown sugar
1/2 cup granulated sugar
2 eggs
1 tsp vanilla
1 1/2 cups all purpose flour
1 tsp baking soda 
1 tsp cinnamon 
1/2 tsp salt (optional)
3 cups quick or old fashioned oats - uncooked
1 cup chocolate chips (or raisins)

Heat oven to 350.  In a large bowl, beat butter and sugars on medium speed of electric mixer until creamy.  Add eggs and vanilla; beat well.  Add combined flour, baking soda, cinnamon and salt; mix well,  Add oats and chips; mix well.  Drop dough by rounded tablespoonfuls onto cookie  sheet.  Bake 8-10 mins or until golden brown.  Cool 1 minute on cookie sheets - store tightly covered.  Makes about 4 dozen.

Save the container!  You can turn it into a nursery school project!
A wind sock for the kids to make in March!
cut out the bottom and buy some streamers from the party store.  Have the kids decorate a piece of construction cut to fit the container
and cut holes on the top for a string for the kids to hold onto and add colored streamers of the kids choice to the bottom
 Perfect March project.  Bread crumb containers will work too - how many cookies can a family eat since hot oatmeal doesn't get eaten too often around here.  And I need 12!
